Die Weinreben sind 50 Jahren alt und sind das wichtigste Erbe die man kultivieren und bewahren soll.<\/p>\n<p><strong>Z\u00dcCHTUNG<\/strong>: Spalier-system mit Simonit Guyot-Methode, 5\/8 Knospen f\u00fcr jede Bogrebe.<\/p>\n<p><strong>DURCHSCHNITTSERTRAG:<\/strong> 80 Tonnen\/Ha<\/p>\n<p><strong>LAGERF\u00c4HIGKEIT:<\/strong> 15 Jahre<\/p>\n<p><strong>SAISON 2023:\u00a0 <\/strong>The 2023 season had completely different connotations compared to previous harvests.\u00a0Between November and February there were constant rains and good snowfalls in the Alpine and pre-Alpine areas, in particular Monte Baldo remained white until the end of March. Budding began in line with the 2022 vintage, in fact, the first cottony buds showed themselves around March 14th. Until the end of April, the climate was mild and windy, allowing the vine to sprout constantly and gradually. From May onwards, however, heavy and constant rainfall occurred, heralding a season that would not be easy from an agronomic point of view.\u00a0The development of the bunch was slowed down by the sudden vegetative push of the vine, resulting in a delay of around 15 days compared to the 2022 vintage. Complete veraison occurred with a strong general delay, leading the grapes to accumulate high point of acidity until the end of September. Fortunately, as with the last 2 years, the harvest was accompanied by a phase of general good weather, in fact the months of September and October proved to be dry and constantly windy. The first bunch was harvested on the night of September 6th and the extraction of the first musts demonstrated the particularity of the season. The rainy and cool climate characterized the vintage, making it unique from the point of view of gustatory and aromatic freshness.<\/p>\n<p><strong>BEGINN DER LESE<\/strong> 3 OKTOBER <strong>ENDE DER LESE<\/strong> 3 OKTOBER<\/p>\n<p><strong>WEINBEREITUNG:<\/strong> Der Seselle folgt die typische rote Weinbereitung mit der Trennung der Trauben, wenn die Trauben im Keller kommen, werden sie entrappt und direkt in die Wanne gepumpt. Hier f\u00e4ngt die G\u00e4rung unter kontrollierter Temperatur an, mit ausgew\u00e4hlten Hefen und Mazeration auf die eigenen Schale. W\u00e4hrend dieser 15 Tagen G\u00e4rung werden Remontage und Keltern durchgef\u00fchrt um den \u201eHut\u201c der Trester bedeckt zu lassen. Mit Null Grad wird er anschlie\u00dfend abgezogen und aufgeteilt zwischen Vorlaufwein und Torchiato, mit dem Versuch das Gleichgewicht des K\u00f6rpers vom Wein mit dem Tanningehalt beizubehalten. Die Verfeinerung folgt in einer Edelstahlwanne bis zur Abf\u00fcllung, erst nach der Kl\u00e4rung und einer kurzen Reifung in der Flasche vor dem Verkauf.<\/p>\n<p><strong>AUSSEHEN UND GEF\u00dcHL:<\/strong> Rubinrote Farbe mit granatroten Reflexen. Der Geruch \u00e4u\u00dfert das Roestgrad der verschieden Holztypen, Vanille, Kakao und eine leichte balsamische Note im Finale. Der Geschmack hat die typischen Eigenschaften der gro\u00dfen roten Weine aus dem See, wo Eleganz und Mineralit\u00e4t die richtigen Merkmale des Terroirs dieses Weins sind.<\/p>\n<p><strong>WEIN-PAARUNG:<\/strong> Es geht mit allen Fleischsorten.
